SSB: I haven't made any additional settings, but when you transmit, it's best to hold the microphone close to your mouth and speak as loudly as possible. The output power is related to both your voice volume and the microphone's sensitivity.
As for frequencies, the more you experiment, the better you'll understand which ones are popular. For example, the 20-meter band (14.255-275) is very busy with local traffic, while the 15-meter band (21.2-21.4) tends to have a lot of foreign activity, particularly from Chinese and Japanese amateurs.
